How was your day? Mine was great. It started with a Green-A-Colada + coffee in the sun š Got a lot of work done, took the pup (Michael) to the dog park, then headed out for GORGEOUS 7-miler around the Potomac River, Lincoln Monument, and Reflecting Pool. Twas wonderful.
To break up the work I whipped up some Homemade Garlic Lemon Hummus compliments of Garlic Gold. If you are a garlic fan like myself, and you haven’t tried Garlic Gold yet – you’re missing out.
Ingredients:
– 3/4 can Garbanzo beans (chic peas)
– 1 can white beans
– 2 finely diced garlic cloves
– 2 tbsp Garlic Gold Lemon Vinaigrette
– 2 tbsp balsamic vinegar
– 2 tbsp rice vinegar
– 2 tbsp H20
– 1/2 tsp sea salt
– 1/2 tsp black pepper
– 1/2 tsp red chili flakes (more if you like it HOT)
Directions:
– Add ingredient to food processor and blend
– Garnish with paprika and a little EVOO
– Serve chilled
Sooooo, can you guess where I’m headed tomorrow? The Manfriend, sister, and I are driving home to New Hampshire for….The New England Country Music Festival!
I can hardly contain my excitement! We rented a few hotel rooms with my cousins and some NH friends. It’s become a family tradition and I have every intention of keeping this one alive š
I’m most pumped to:
– See my brother, sister-in-law (to be!), cousins, friends
– Sip skinny margaritas in the sun
– Tailgate with amazing grillers and snacks we have planned
– Dance/sing literally ALL DAY
– Then crash at our hotel and avoid concert traffic

>Im making hummus regularly at the casa – we eat it all the time so I use about three cans (drained) of chickpeas and add tahini, garlic, lemon etc. Never used white beans though (its my middle eastern roots what can I say!)Do you find the flavour different?

The last concert I went to (and it ROCKED, btw!) was Saving Abel. They were amazing! Nachos are a tailgating classic for me (and now one that I can vegetarianize without too much fuss).
